Moist Non-Fat Banana Bread |

Ingredients
- 1 1/2 cups flour
- 3/4 cup vegan sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1 teaspoon vegan maple syrup
- 2 "egg whites" (I use 2 Ener-G vegan egg replacer eggs)
- 3 ripe bananas, mashed well
- 1/4 cup unsweetened applesauce
- 1 1/2 cups flour
- 3/4 cup vegan sugar

- 1 teaspoon vegan maple syrup

- 3 ripe bananas, mashed well
- 1/4 cup unsweetened applesauce
Procedures
Preheat oven to 350F. Mix dry
ingredients, then add maple
syrup, "eggs", applesauce, and bananas.
Pour into greased baking pan and bake
50-55 minutes, or until a toothpick
comes out clean. Turn out onto rack,
let cool 10 minutes.
Note: this vegan bread is fairly dense and
moist. Be sure to test it with a
toothpick before deciding it's done, or
the bottom might be overly wet and
chewy.
